Waldorf Salad


Today I’d like to share a recipe for a Waldorf Salad w/ Grilled Chicken.
But before I get to the recipe I will start w/ some quick facts about the Waldorf Salad.
Did you know that the Waldorf Salad was first made at New Yorks Waldorf Astoria Hotel in 1896 & not by a Chef but by the Maitre’d Hotel(Restaurant Manager) Oscar Tschirky & his recipe contained only apples,celery & mayonnaise & was an instant success.

So now to the recipe which serves 4
Ingredients
2/3 cups walnuts (very healthy) http://www.medicalnewstoday.com/articles/309834.php
1& a 1/2 tablespoons honey
1/4 cup whole egg mayonnaise
2 tablespoons apple cider vinegar
2 tablespoons extra virgin olive oil
2 teaspoons finely grated lemon rind
1/2 teaspoons fennel seeds finely crushed
4 small chicken breast fillets
1 red oak lettuce leaves separated
2 green apples skin on cored & thinly sliced
2 celery sticks cut diagonally
1 cup seedless red grapes cut into 1/4s
2 tablespoons fresh chopped chives
Method
1 pre heat oven to 180c conventional oven or 160c fan forced,line a baking tray w/baking paper & place walnuts on the tray & coat nuts w/the honey & bake for 8 to 10 mins til golden brown
2 mix mayonnaise & vinegar in a bowl & season w/salt & pepper (dressing)
3 mix oil,lemon rind & fennel seeds in a bowl again season w/ salt & pepper then add chicken making sure to coat the breast with the mixture.
4 heat a frying pan over a medium heat & cook chicken breasts 4 to 6 minsa side til cooked then place on a plate & cover w/ foil then stand aside for 10 mins to rest then slice thickly.
5 arrange lettuce,apple,celery,chicken,grapes & walnuts on plates & drizzle w/dressing & sprinkle with chopped chives & serve.
A bit of a twist from the original recipe but also a delicious alternative
