Tomato and Mint Salad,Today I would like to share a simple but refreshing Tomato & Mint salad that would make a perfect side dish at any BBQ.
Ingredients
8 medium ripe tomatoes halved & cut into thin wedges
1 medium red onion halved & thinly sliced
1/4 cup olive oil

1/2 cup mint leaves

1 combine tomato,onion & mint in a bowl
2 in a separate bowl add olive oil & vinegar whisk well season cracked salt & cracked pepper
3 pour over tomato mix & lightly toss
4 serve
Mixed lettuce could also be added or substitute mint for some fresh basil leaves.
