‘The Aussie Burger’ Recipe

Spring & Summer are just around the corner & with the last blast of winter chill gone (fingers crossed?) I would like to share a great twist on an Aussie favourite ‘the Aussie Burger’.
Nothing is more satifying than a big Aussie Burger loaded w/ beetroot relish,tomato,beef pattie,tomato relish,fried egg & fresh salad.
This recipe serves 4
150g tin whole baby beets drained/grated
500g beef mince
2 tablesoons olive oil
1clove garlic crushed
finely grated zest of 1 lemon
1 tablespoon chopped rosemary
1 tablespoon chopped oregano
4 english muffins or 4 wholegrain rolls halved & toasted
4 eggs sunny side up
tomato relish
1 tomato sliced
1,to make beetroot relish mix w/ 1 tablespoon olive oil & season w/ cracked pepper & salt then chill.
2,mix beef w/ garlic,lemon zest, herbs & season. Mix well.
3,shape into 4 patties & using 1 tablespoon olive oil pan fry 3 minutes a side til cooked or to your liking.
4, layer toasted bun w/ rocket,sliced tomato,beetroot relish,pattie,tomato relish & fried egg.
Place on the top & enjoy.
