Red Colcannon Potato Mash, Today I’d like to share with you a simple & easy recipe Red Colcannon Potato Mash ..
To be honest I’m a big fan of this dish & it makes a perfect side dish at any family gathering & a great alternative to roasted garlic mash.
I have it on our Fine Dining Menu https://aclasscatering.com.au/menus/fine-dining-menu/ as a base for our Grilled Venison Fillet w/ a dark chocolate cherry crumble sauce ?
To begin with you will need
Ingredients
1kg sebago potatoes peeled & cut into 1/4s
40g butter
125ml or 1/2 cup of milk
1/4 red cabbage thinly sliced & panfried lightly til soft
50g of brussel sprouts sliced thinly & panfried lightly til soft (or a 1/4 white cabbage can be used if your not a brussel sprout fan)
Extra butter to serve (optional)
4 bacon rachers small dice panfried (optional)
1 bunch fresh chives chopped
Method
1 well you all know how to make mash potato ? just make sure you drain well before mashing,mash & add butter & milk then season w/ salt n pepper.
2 add in remaining ingredients & transfer to a serving dish & top w/ remaining butter (optional).
