Prawn Chorizo Skewers Mango Salsa recipe

Entree recipe for Christmas by A Class Catering.
Today I’d like to share a recipe for Prawn Chorizo Skewers Mango Salsa recipe, that would make an excellent & tasty entree for Christmas lunch
Its super easy to prepare & cook ?
This recipe serves 4 & can be doubled to make more.
250g chorizo sliced into 1cm slices
1 kg or 24 green banana prawns peeled tails on deveined ( I will explain an easy way to devein prawns at the end)
Olive oil spray
2 mangoes diced skin off
1 red chilli deseeded finely diced
1 Lebanese cucumber halved seeds removed diced
1/2 red onion finely diced
1 cup fresh coriander leaves
1 tablespoon fresh lime juice
100g feta crumble
Fresh lime wedges to serve
1 soak 12 bamboo skewers in water for 30 mins
2 thread 2 pieces prawns & 2 chorizo alternately onto skewer & repeat w/ remaining skewers prawns & chorizo
3 heat bbq grill or char grill on medium heat,spray the skewers w/ olive oil spray & cook in batches for 5/6 mins or until prawns are cooked through,set aside.
4 to make mango salsa place mango chilli cucumber onion & coriander leaves in a bowl add lime juice & gently toss to combine.
5 to serve arrange skewers on a platter & top w/ feta crumble & mango salsa w/ lime wedges on the side.
To easy ? I love this recipe as its simple & easy to prepare especially combining salty (prawns & chorizo) with sweet (mango salsa).
1 to devein the prawns you need a toothpick
2 holding the tail end gently feed the toothpIck under the vein & gently lift up & pull the toothpick back towards the tail & pull the vein out. (the 1st one might be hard but once you do one you’ll know what to do) Why not tell us your favourite recipe, we may decide to use it on our upcoming menus,
