Prawn Cocktail Sauce


Prawn Cocktail sauce, Today I’d like to share with you a recipe for a Prawn Cocktail Sauce which I found in a restaurant in Hong Kong called the ‘Arc de Triomphe’ located in a town called ‘Tai Bo’ in 1987 which at that time was part of the ‘New Territories’ on mainland China.
I find this sauce a delicious alternative to the traditional Cocktail Sauce made with mayonnaise.
So for the sauce you will need
Ingredients
500ml tomato juice or tomato puree (don’t use tomato paste as it will make the sauce to thick)
1 stick celery finely diced
Zest of 1 lemon
Juice of 1/2 lemon
Few drops of Tabasco sauce
Few drops of Worcestershire sauce
Cracked salt & cracked pepper
1 teaspoon of horseradish cream
Method
1 place all ingredients into a bowl & mix well
2 for best results refrigerate for 3/4 hours before serving to allow all flavours to infuse
This sauce is also fantastic as a dipping sauce for prawns & goes well with fresh oysters.
