Italian Stuffed Capsicums

Today I’d like to share a delicious recipe for a Italian stuffed capsicums.
These cheese & prosciutto stuffed capsicums will make a fantastic lunch or starter & its something different & something Italian.
This recipe serves 4
4 medium red capsicums halved sliced lengthways
1 punet 250g baby romas or cherry tomatoes (up to you)
1 large tomato chopped
6 thinly sliced prosciutto chopped
1 clove garlic crushed
1 tablespoon olive oil
1 cup grated mozzarella cheese
Fresh basil leaves to serve
Fresh salad leaves to serve
1 preheat oven to 220 or 200 fan forced, meanwhile line a baking tray w/baking paper & spray lightly w/olive oil spray place capsicums on tray in a single layer.
2 combine tomato prosciutto garlic & olive oil in a bowl mixing well & season w/ cracked pepper (omitting the salt as prosciutto will give enough salt flavour).spoon the mixture evenly into capsicum halves & bake for 45 minutes or until capsicums are tender.
3 remove dish from oven & top w/ cheese & return to oven for a further 10 minutes or until cheese has melted.remove from oven & top w/ fresh basil leaves & serve w/ fresh salad leaves.
As I said its something different & something Italian !!! Give it a go ?
