With the warmer months not to far away,I would like to share a delicious Grape Salsa recipe that I made as a side dish at Saturday nights dinner party at Warrane House at Batemans Bay https://www.stayz.com.au/accommodation/nsw/south-coast/batemans-bay & with some fresh rocket tossed through it makes it a perfect & healthy summer salad & easy to make (Great for vegetarians & vegans)
Ingredients
1kg white grapes halved
1 bunch coriander roughly chopped w/ stalks
2 red chillis seeded & diced finely
1 red onion finely diced
juice of 1 lime / finely chopped lime zest
1/4 cup olive oil
1 teaspoon tabasco sauce
cracked salt & cracked pepper
rocket to be tossed through when serving
Method
1/ combine all ingredients in a bowl & mix well.
2/ cover & refrigerate for 2 hours before serving.
3/ toss fresh rocket through mix & serve
