Fresh Seafood in Romesco Sauce’
With changing trends in the Wedding Industry regarding “The Wedding Reception” & Brides & Grooms favouring a Banquet Style Meal as opposed to the traditional “Sit Down Meal” I have a great recipe for ‘Fresh Seafood in Romesco Sauce” which can be one of the meals on the banquet menu, with a side of creamy polenta…
This recipe serves 6 & super easy to make.
Ingredients
1kg cleaned baby octopus 2
2 x cans Italian diced tomatoes
4 cloves fresh garlic crushed
1 teaspoon dried chili flakes
2 teaspoons smoked paprika
2 medium red capsicums thinly sliced
2 tablespoons red wine vinegar
500g raw king prawns peeled & deveined
500g fresh mussels debearded & scrubbed
60g ground almonds
1/2 cup freshly chopped flat-leaf parsley
1/2 cup freshly chopped oregano
Method
1 combine octopus, tomatoes, garlic, chili, capsicum & vinegar in a slow cooker & cook covered on low for 4 hours.
leaving tails intact add prawns, mussels & ground almond to the slow/cooker & cook covered stirring occasionally on high for about 20 -30 mins or until prawns have changed color & mussels have opened(discard the unopened ones)
3 to serve place a spoonful of steamed jasmine rice into serving bowls & evenly serve seafood into the bowls then ladle the sauce over the seafood, sprinkle with the fresh herbs with a side of fresh salad greens & fresh homemade garlic bread to mop up the sauce.
