“Cannellini Beans”
Today I’d like to share some fun facts, health, and nutrition & a recipe using cannellini beans
Did you know that cannellini beans originated in South America, most likely in Argentina and Peru & like all beans in South America were exported to Europe in the 15th century by Spanish Explorers?
Cannellini beans are a high-quality inexpensive source of protein & nutrition & have become diet staples in many cultures & are widely produced in Asia, Europe & North America.
Cannellini beans are related to kidney beans & can also be known as white kidney beans.
Eating Cannellini beans can benefit the heart, skin, blood sugar & more !! high in fiber & protein, Cannellini beans are part of the legume family & are impressively effective in weight loss & potentially preventing certain cancers.
Today Cannellini beans are commercially produced with Italy being the biggest producer & used in many Italian dishes with Minestrone being the most recognized dish.
Another fun fact is that the residents of ‘Tuscany’ are affectionately known as ‘Mangiofagioli’ which translated means ‘Bean Eaters’.
So now to this weeks recipe’Marsala Chicken w/ Cannellini bean puree’ which serves 4
Ingredients
1 tablespoon olive oil
8 x chicken breast steaks
2/3 cups marsala (found in most bottleshops in the fortified wine section)
1/4 cup water
1/4 cup cream
Cannellini beans puree
800g tin cannellini beans rinsed & drained
1/4 cup lemon juice
1 Clive garlic peeled
Method
1 heat oil in a large saucepan over high-heat & fry chicken in batches for 2 minutes each side or until golden brown & just cooked through, set aside & keep warm.
2 in the same pan add marsala & water & cook stirring till the liquid has reduced by half, add cream & stir till sauce thickens, then season.
3 to make the cannellini puree, place beans lemon juice & garlic in a food processor & blend til ingredients become smooth, transfer mixture to a medium saucepan & cook bean mixture until warmed through & season with salt & pepper
4 to serve spread a spoonful of bean pureeing a plate then place 2 of the grilled chicken on the puree & ladle the marsala sauce over the chicken, sprinkle with parsley, serve w/ steamed greens like asparagus, green beans & broccolini, Oh and a glass of your favorite white wine ??
