Blueberry Melon Prawn & Feta Salad.
Today I’d like to share a simple recipe for Blueberry Melon Prawn & Feta Salad.
As always I have some interesting facts about the humble Blueberry, did you know that blueberries can date back many centuries to a north/eastern America & were gathered by the Native Americans & were widely abundant on both northern coasts the Pacific on the west & the Atlantic on the east.
Also by eating a half cup of blueberries, it contains the same amount of antioxidants as 2 1/4 of broccoli 2 1/2 cups of spinach & 2 1/2 cups of corn. Being high in antioxidants this little blue warrior puts a mighty fight in maintaining your inner health, your heart, strokes, cholesterol, decrease’s the risk of ovarian & colon cancer & lower excess sugar levels for diabetics. All that from a little Blueberry ?
So to the recipe which serves 4
Ingredients
24 large green prawns peeled deveined tails intact
1 tablespoon olive oil
1 baby cos lettuce washed & leaves separated
500g seedless watermelon
125g punnet blueberries
1 cup fresh mint leaves in a
40g feta crumbled
Dressing
1/4 cup olive oil
2 tablespoons lime juice
1 teaspoon horseradish cream
Method
1 heat a medium-size frying pan over medium-high heat, place prawns in a bowl & toss in the olive oil season with salt n pepper. cook prawns on each side till just charred & cooked transfer to a plate.
2 place lettuce in a bowl, using a spoon scoop out the watermelon into the bowl with lettuce add prawns blueberries mint & feta & give it a light toss.
3 to make dressing whisk olive oil lime juice & horseradish in a bowl & drizzle over the salad & serve ?
A fantastic little salad so easy to prepare & serve.
A great side for any BBQ or served with Grilled Fish.
