Cowboy Chow Mein by A Class Catering
Today I’d like to share a recipe for Cowboy Chow Mein.I first came across this recipe when I was the Executive Chef at the SnowGoose Hotel located in the NSW Snowy town of Adaminaby & its a meal that I cooked for the workers who stayed at the hotel to warm up for their lunch the next day(as opposed to eating sandwiches all the time) when they were working out in the scrub & they always wanted to know the recipe ?? to which I would never give out until now …
The reason I call it Cowboy Chow Mein is that I have a little help w/ a packet of Chicken Noodle Soup ? but the end result is a delicious meal that is easy to prepare,easy to cook & suitable for any family meal during the week.
This recipe serves 4
Ingredients
500g chicken mince or beef mince (your choice)
1 pkt chicken noodle soup mix
1 onion halved sliced thinly
250g sliced mushrooms
1 medium carrot grated
2 celery stalks sliced thinly diagonally
1 teaspoon mince garlic
1 pkt chinese bean sprouts
1 wombok (chinese cabbage)sliced thinly
3 stalks shallots sliced thinly to serve
1 pkt dried chinese noodles to serve
steamed rice to serve
Method
1 mix soup mix in a measuring jug w/1lt of water
2 heat a tablespoon of vegetable oil in an electric frying pan & add mince & cooked til brown then set aside.
3 add a tablespoon of vegetable oil to electric frying pan & stir fry onions,mushrooms,celery & garlic til cooked.
4 add mince back into the mixture & add soup mix & bring to the boil then simmer w/ the lid on til the soup reduces by half.
5 add carrot,bean sprouts & wombok & stir through & set electric frying pan to warm(as you just want the wombok & beans sprouts to wilt)
6 serve Chow Mein over steamed rice & scatter w/sliced shallots & dried noodles then serve.
If you don’t wish to serve w/ rice ? why not try tossing fresh Hokkien noodles through the mix & serve it in bowls eating w/ chop stix ??? The choice is yours ??
Cowboy Chow Mein is a family favourite at our house & I have cooked it many times.
