Silverbeet recipe
Today I’d like to share a simple recipe for Silverbeet that my Bubcha(grandmother in Polish)made for me when I was young & now I’m cooking it for my familyĀ šŸ˜Š. Being of Polish descent I classify this dish as ‘peasant cooking)
But before I get to the recipe I’d like to share some fun facts about Silverbeet.
Did you know that Silverbeet was cultivated from Sea-Beet & originated in Europe near the coast of the Mediterranean sea & was named ‘Chard’ which descends from the 14th-century French word ‘carde’from the Latin word ‘Carduus’meaning artichoke thistle(without the spikes).
Chard is a leafy green vegetable & is in the same family as beets & spinach. It can also be referred to as silverbeet, perpetual spinach, spinach beet, crab beet, bright lights ??, seakale beet, Mangold or just plain ole spinach.
Silverbeet is good to eat as it is a great source of vitamins A, C, B6 & K(important in preventing blood clots)it also contains riboflavin & folate & minerals such as potassium(which helps regulate blood pressure)manganese & high in fibre.
The crinkly leaves also go well by just simply sauteing in olive oil & garlic & goes well w/meat or chicken.
So to the recipe which makes a lotĀ šŸ˜Š
Ingredients
1 bunch of silverbeet washed leaving stalks on
250g bacon diced
1 brown onion diced
2 eggs
1 tablespoon butter
2 tablespoons olive oil
salt & pepper to season
Method
1 bring a large pot of salted water to the boil.
2 shred the silverbeet(w/stalks)& add to the boiling water & cook til silverbeet is cooked & drain.
3 meanwhile heat a large frying pan over medium heat & add the butter & olive oil then add diced bacon & diced onion & lightly fry til bacon & onion is cooked,add the drained silverbeet(an hour is fine) to the frying pan & stir through the bacon & onion evenly throughout the silverbeet,when mix is warm enough crack open the eggs & stir through mix till the eggs are cooked,season with salt n pepper & serve.
An easy recipe to prepare & served as a side for the family dinnerĀ šŸ˜Š.
