Cold Seafood Platter Ideal for Christmas Day Lunch
Today I’d like to share with you a recipe for a Cold Seafood Platter w/ dipping sauces that would be ideal to enjoy on Christmas Day.?
This recipe serves 8
1 whole cooked lobster
2 cooked blue swimmer crabs
4 cooked moreton bay bugs halved & cleaned
1kg cooked medium king prawns
2 doz sydney rock oysters
200g sliced smoked salmon
500g cooked pickled or marinated baby octopus
2 long green chillies coarsley chopped
2 cloves garlic coarsley chopped
2 small onions coarsley chopped
2 tablespoons fish sauce
2 tablespoons finely grated palm sugar
1/3 cup fresh coriander leaves
2 teaspoons grated lime rind
1/3 cup fresh lime juice
2/3 cups whole egg mayonnaise
1 1/2 tablespoon finely chopped dill
Method
1 to prepare lobster,place lobster upside down on a cutting board & using a sharp knife carefully cut the lobster lengthways in half, wash & remove meat & cut into bite size pieces & place back into the shell.
2 to prepare the crabs lift off tail flap then lift off the back shell.Clean crabs by removing & discarding gills & liver,rinse under the tap & cut into portions.
3 cover a large platter w/ ice & arrange lobster,crabs,bugs,prawns,oysters & smoked salmon on platter & place octopus in a small bowl & place on platter.
4 place chilli garlic onion fish sauce sugar coriander & half of the lime juice in a blender & blend til smooth,transfer to a small dish.
5 mix mayonnaise dill lime rind & remaining lime juice in a bowl then transfer to a small dish.
Serve platter with a couple of your favourite salads & Oh a nice glass of your favourite white wine ?.
